Week 17- Recipe

This week I am trying a recipe from a place i haven't used for my blog yet. I know, no Ina, Giada or Fresh Market this week? Don't worry, I will go back to them! This week I am trying a recipe from the newest edition of Everyday Food magazine. Now, I looked on the website & the recipe is not posted on there yet because it is from the newest edition. So, your options are to either buy the magazine (has really good other recipes in there as well) or wait & look on the website in a week or two. Maybe you should just save your time & money & wait until I do it & post the results. That way, if it is gross, you don't need to worry about it! I love being your cooking Ginny pig! So, here is the name of the recipe.

Week 16- Results

The Smoked Salmon BLT: So this week I tried a new twist on an old favorite. Actually, I did it because my husband loves smoked salmon & I thought he would enjoy this for lunch. It was easy to make with no special tools needed. I love salmon, but not smoked salmon. It is the texture that grosses me out! So, needless to say I was not a fan. I did like the mayo spread she had you make with it, but didn't care for it overall. My husband didn't have an opinion either way.

The Pecorino and Bean Salad: This is the one I made for myself! This was super easy to throw together & nothing tricky or special needed. The chewiness of the Edamame (which is really good for you...especially women) & the softness of the Cannallini beans was such a great combination! The dressing with the fresh herbs (I have an herb garden thanks to my loving husband) was so lite & fresh tasting. This is a PERFECT salad for the summer coming up or anytime! This will be on my favorites list for sure! Bon Appetit!

Week 16- Recipes

This week I thought I would do something different from another dinner recipe. So I am switching it up & doing a lunch recipe! I know you all are thrilled & can't contain your excitement, but please refrain from this & have some patience while I write & reveal the recipes. As usual, one of these recipes interested me & the other I did because I thought my husband would like it (aka I probably won't.) But I am nice like that & I like to make things I think he will like even though I know I won't. So, without further rambling........... here are this weeks recipes (feel lucky, I did 2 recipes!)

Week 15- Results


So this week I did another Risotto recipe. The only unusual thing the recipe called for was Brandy, but I substituted with Cogniac. It was a straight-forward recipe in that it wan't hard to follow & didn't call for any weird cooking untencils. The frozen lobster tail that I used was expensive, but I am sure the fresh lobster tail would have been more. I am a lobster lover, but I didn't like the way it tasted (again, fresh probably tasted better!) It turned out tasting okay, but I have other Risotto recipes I like better. You should try it though if you are looking for a new spin on Risotto. Bon Appetit!

Week 15- Recipes

This week I am going to try a new Risotto recipe. If you haven't noticed, I am on a Risotto kick lately. I don't know if it's the creamy goodness that I love so much or the variety of different things you can put in it that I love so much, but either way I am making another Risotto recipe.

I am going to pair this with salmon, but I am going to just throw something together to top the salmon, so I don't have a recipe for that....sorry! But I will let you know what I came up with after I make it :)

Week 14-Results

This week I thought I would honor Cinco de Mayo by making 3 delicious Mexican dishes. Some like Cinco de Mayo to honor the Hispanic Culture, some use it as an excuse to drink, but I love it because it was always something we celebrated (I grew up in the Southwest.) I love it because I LOVE MEXICAN FOOD!!!!!!!! I must say I was a little scared to make these recipes. I am a perfectionist & trying 3 new recipes for a holiday feast was a lot to take on. But I can honestly say, IT TURNED OUT AWESOME! Here is a break down of the recipes.

Mango Pork & Pineapple Tacos with Avocado Cream was not hard to make. You did need special ingredients for this recipe. This recipe is from the Fresh Market's magazine & it called for 2 ingredients that you buy there. Now, you can try to go to their website, http://www.thefreshmarket.com/, and purchase the ingredients or you can try to substitute. If you look at the recipe & get the brand names of the ingredients, you could even try to google them & see if they are sold in your area. The ingredients were a marinade & a Southwest seasoning. Anyways, the I marinated the pork for about 1 1/2 hours (I was busy with the other stuff while it marinated so you don't have to let it marinate that long.) Then I simply seared them in a saute pan followed by the pineapples. I did go the canned pineapple route because I was not about to slice it myself. The Avocado Cream was easy to make & was even good by itself! The finished results was very flavorful & savory. My husband gave it a 10 & said this was one of his favorites! You really should try this recipe!

The Guacamole Salad was easy to make. Just cut up all the veggies & make a quick sauce to pour on top. One precaution....wear gloves when mincing the jalapeno peppers. It wasn't noted to wear them on the recipe, but my fingers started to burn a few hours later. This salad was a little spicy for even me, but I love spice so it made it all the better. If you are not a spice fan, you might want to omit the jalapenos. This was a great spin on plain guacamole like I usually make each week.

The Mexican Flan was the recipe I was most nervous about. I always seem to mess up custards. I didn't have a metal pan, so I used glass ramekins instead. Now this may have contributed to my problem with the melted sugar (you are to melt sugar to make a caramelized topping, but you are to pour it into the mold first to let it cool.) Well, my sugar got hard REALLY fast & almost instantly hardened on the bottom of the ramekins. If I had done it in a metal mold, it may have been different especially when you flip it over to let the caramel supposedly drip from the top while putting it on a serving tray. Anyways, the rest was easy to make & there weren't any ingredients that were hard to find. It was actually pretty easy to make. It also tasted pretty good, but would have been better with the caramelized sugar dripping over the top. Next time, I might melt the sugar right before I serve it & pour it over the top. I will let you know how that turns out the next time. If any of you try this recipe, please comment if you had success or failure with it. I would like to know how it went for you.
